Delicious Carrot Jam Recipe

It’s almost a given that every household stocks a jar of jam in their fridge or cupboard, yet most times, these shop-bought products are jam-packed (pardon the pun) with loads of sugar. This scrumptious and healthy home-made recipe will be sure to whet your palate and leave you feeling guilt-free.

I N G R E D I E N T S
/ 3 long organic carrots
/ 2 tbsp chia seeds
/ 3 cups boiled water
/ 3 tsp dark brown sugar
/ 1/4 cup of rice malt syrup
/ Pinch of cinnamon
/ Pinch of sea salt
/ Pinch of nutmeg
/ Squeeze of lemon

D I R E C T I O N S
1. Chop/ peel the carrots as you wish (we personally like to do ours finely peeled for a thin consistency).
2. Sauté carrots with the brown sugar and rice malt syrup on a medium heat, add the boiled water, chia-seeds and lemon juice.
3. Lower the heat to the minimum setting and leave until it thickens and forms the texture you like.
4. Allow to cool and pour into an airtight glass jar. Keeps in fridge for up to 2 weeks.
